Omelette with Traditional Balsamic Vinegar of Modena
Ingredients (for 4 people):
8 fresh eggs
1 medium-sized onion
3 tablespoons of Traditional Balsamic Vinegar of Modena PDO
2 tablespoons extra virgin olive oil
1 pinch of chopped aromatic rosemary, salt, sage, basil and garlic
Put in a pan the e.v.o. oil and the sliced onion, then on a low heat, cook the onion slices until they are brown. Meanwhile, mix eggs with chopped herbs in a bowl. Put everything into the pan with the e.v.o. oil and onions. Attention: The cooking process should be fast. Try to get a nice golden brown on both sides of the omelet. At this point, put the omelet directly on the plate, removing the oil. We put now "The Balsamico" from a teaspoon.
